I saw this photo last week and immediately bookmarked it. Everyone I've shown it to worries it will be messy or a fire hazard. I'd love to hear your feedback on how it all went!
Those canisters are pretty safe. They are meant to heat chafing dishes (big serving dishes for buffets) and I've worked with them at a restaurant I worked at. I wouldn't be worried about the fire hazard unless you think people will pick them up and mess with them, which I doubt they will.
If I were going to set this up, I would get some kind of a long box. (Try the floral containers at a craft store. You want something long and rectangular to accomplish this buffet look.) Set the cannisters in the container and surround them with something heavy... rocks or those large glass fake-rocks... something solid. Sand would work but I would be worried about accidentally getting some sand inside the cannisters and ruining them. You can light the cannisters with a long lighter after they are steady in the container.
A caterer at a bridal show we went to had this set up! It would be easy enough to do yourself though, it looked just like the picture. It was really good, just have to be careful with the marshmallows catching on fire :)
I love it too! Sorry for the late response -- my dad is creating the box for me - it is basically a planter but he is tiling it on the outside with our colors.. then adding the river rock on the inside and the little oil flames are actually SUPER cheap and can be bought at any restaurant supplier - even Sams.
I have found a bunch of fun different ways to make s'mores as well. So we have made little recipes and names the smores,
Example
our dogs name is Chip
Chip O' Love S'more
Chocolate chip cookie, toasted marshmallow, and cookies and cream hersheys
We have another that is white chocolate with a raspberry spread
There is another with a cinamon graham cracker with a peanutbutter spread, dark chocolate peice and a marshmallow....
We are framing the "Recipes and we have an employee at our venue that is going to help children, or clean up messes and make sure it goes smoothly.... he will also offer to make the smores if people dont feel like dealing with it.
Our favor will also be on this table and will be smores to go -
Freeze the marshmallow with a little popsicle stick in them and then cover them with chocolate and then sprinkles, or nuts, or crushed heath bar...and we have personalized little clear bags that have a little tag that say "S'more Love To-Go"

OMG! I love this, we were debating between this and a candy buffet. We were leaning towards the Candy bar because it'd be a nicer presentation, but this approach beats the candy bar by far!

Fall wedding so this is the perfect "candy station" and will double as our favors!
